The BEST Turkey Tacos!

 

Now I know it's not Cinco de Mayo but I was really craving some tacos tonight and absolutely needed to make them. When I sat down and began eating after cooking, I remembered just how good this recipe was and NEEDED to share. There really isn't much to it and I'm not going to sit here and write about how they are "authentic" or unbelievably "innovative," because they're not. They are probably the simplest tacos that one could ever make. But, they are a fan-favorite in my house and always hit the spot. Here's how you make them:


Recipe Yields around 8-10 servings (great for leftovers): 

2 lbs of ground turkey (preferably free range if you have access to it)

1 large yellow onion sliced

1 large red pepper sliced

2 cloves of garlic (crushed) 

1 package of favorite taco seasoning (I use this one)

1/2 cup of frozen corn

1 package of flour tortillas (or jicama tortillas from Trader Joe's for a lighter substitute)

Ground black pepper (to taste)

Toppings

Guacamole (store bought or homemade)

1 tomato (mixed with lime)

Sour Cream

Cheese


1. Start by slicing your onion and peppers vertically to create nice thin strips that will caramelize nicely.


 


2. Add onions and peppers as well as crushed garlic to a hot pan w/ a bit of olive oil & season with a little bit of cracked black pepper.



3. Brown on medium heat for about about 5 minutes. The trick to amazing sautéed veggies is to "deglaze" the pan with water. So, when your veggies look like they are sticking, add small spoons of water and loosen them up, pulling any sugars off of the pan.

4. Add ground turkey and continue to cook on medium-high heat until meat is cooked through, then add taco seasoning and mix everything together. 

5. Once everything is cooked, add frozen corn, place lid over top of pan and turn off heat. 

7. Prep your toppings, warm up tortillas, and serve! I would definitely recommend eating these with a big bowl of tortilla chips and some extra guacamole on the side. If you'd like, feel free to also serve with rice and beans for extra deliciousness. Enjoy :)
