Healthy Apple Nachos


Picture this: you've just finished up a long day of school. You woke up at 6AM after cramming until 1AM for your two finals in your two hardest classes. After school, you attended a grueling track practice where Coach made you run ten miles at your fastest pace, and now you've come home to your dad making dinner. Only, you haven't eaten since two that afternoon and dad tells you that dinner isn't going to be ready for another hour and you're ravenous. You rummage through every cabinet in your kitchen searching for the perfect snack that won't spoil your dinner but that will keep you satisfied after overexerting yourself all day. And then, like an angel sent down from heaven, you realize that you have all of the ingredients to make a delectable plate of apple nachos. This was very similar to an experience that I had last year and when I tell you this discovery changed my after-school snack game, I really mean it. Here's how you make it: 

Ingredients:

1 apple of your choice (I love Sweet Tango and Honeycrisp, but use whatever you have) 

2 tablespoons of peanut butter powder (either PBFit or PB2, I use PBFit. You can also use regular peanut butter if you like.)

2 tablespoons of water (Omit if using regular peanut butter) 

1/8 cup corn flakes

*ALL MEASUREMENTS CAN BE ALTERED DEPENDING ON YOUR PREFERENCES.* This is also really customizable so feel free to have fun with it! Chocolate chips, honey, cinnamon, Nutella would all be incredible on this, so do whatever floats your boat! 


Steps: 

1. The first thing that you'll need to do is cut up your apple and arrange it on your plate. Personally, I like bigger pieces of apple but if you'd prefer thinner pieces, that works too. 



2. Next, make your peanut butter by combining two tablespoons of powder with two tablespoons of water. You're looking for a more pourable consistency which is why I recommend that you add two tablespoons instead of the regular 1.5. 

3. Then, drizzle the peanut butter over the apples (you might have a little extra to dunk on the side). 








4. Finally, crush your corn flakes over the top of the apples and peanut butter (trust me they are delicious on top and act as a great additional crunch). Enjoy!
